You can customize your own herbal butters to cook with fresh herbs in the dead of winter.

First, let the butter soften to room temperature, usually a few hours. Don’t put the butter in the microwave. It will start to melt or uneven thawing.

Next, fold in the herbs. When the butter is soft, place it in a small bowl with your desired mix-ins.

Then, form the butter into a log. I use parchment paper, or you can put the butter in little plastic tubs.

Once you have your finished product, put in the fridge for an hour to solidify then you can slice off what you need, or you can put in the freezer for up to a year.

Horseradish butter: 2 table spoons horseradish, 1 tsp lemon thyme, 2 tsp parsley, 1 clove garlic minced.
Buttered Noodles Blend: 2 Tbs basil, 1 Tbs parsley, 2 Tbs chives and 2 garlic cloves minced
Veggies Roasting Blend: 2 Tbs basil, 2 Tbs parsley, 1 tsp thyme
